Purchasing meat and game

CHICKEN

After exploring local market around here, I chose ‘chicken ‘ for my assignment. It is because chicken is always been my one of the favorite meal in non vegetarian cuisine and also can be used in producing different recipes. 

A Chicken can also be used as whole bird or also divided into four different cuts- from which chicken breast fillet tenderloin is the most versatile meat. It is soft and can be prepared with various methods like grilling or roasting. I chose this cut because it is an excellent source to have low-fat protein. It is more nutritious part of chicken than others.

Chicken Breast Cut


The chicken is one of the most common domestic animal. Domestication of chicken goes back to 2000 BC and their heritage can be traced back to four types of wild jungle fowl from Southeast Asia. Although the red jungle fowl is the commonly found species and also considered as the prime ancestor of domestic chicken family Clauer P. (2011 December, 15). Chicken is raised in many places to lay eggs and for its meat. Chicken meat is one of the most common meat around the world. Chicken Breasts consists of white meat and are are usually cut down in two halves which is also the expensive part of chicken because usually people prefer to have white meat from the breast over dark meat from other parts. This cut is the part of chicken breasts which are two. It can be sold skin off or skin in , boneless or bone in. Breast without skin and bone is called breast fillet. It is highly nutritious and rich in low -fat protein. On an average, chicken breasts which is boneless and skinless weighs about 5.25 ounces which is obviously half of breasts having bone and skin.

Chicken breasts with skin and bone were priced at 2.97 dollar per lb . There are various recipes for cooking this cut which will surely be a good investment. It can be stuffed, breaded or cut and served into salads , curries and sides.

Cooking Methods

There are various different methods for cooking chicken breasts.
1.Grilling method : Chicken breast is grilled and flipped over . It gives a smokey flavor to chicken and also healthy cooking with less oil for people who are looking out for weight. It is suitable because it is packed with lean protein .


2. Roasting method : It is also known as baked chicken. Chicken breast is roasted in oven which is easy method and also suitable for beginner cooks .


3.Saute : Another method is sauteing of chicken breast in which chicken is sliced or cubed and heated over medium flame in skillet or pan. It is suitable when you are in hurry because it is the fastest way to cook chicken.


4.Broiling : It is cooking method involving high-heat. It is also one of the fastest way to cook chicken breasts.However, it should be ensured that it doesn’t get overcooked. It gives a crispy flavor to chicken.


5.Pan-fry : It involves pan-frying chicken breast till it gets crusty and golden brown. It requires a medium heat to cook. It has this golden color outside and juicy from inside. It should not be flip too soon otherwise it will stick to pan. Larsen L. (2019, November 8th)

Grilled chicken recipe

1/4 balsamic vinegar
3 tbsp. extra-virgin oil
2 tbsp. brown sugar
3 cloves garlic, minced
1 tsp. dried rosemary
4 chicken breasts
salt
freshly ground black pepper
freshly chopped parsley, for garnish

Method:
1.Take a medium bowl, whisk together balsamic vinegar , olive oil, brown sugar, garlic and dried herbs and season it with salt and pepper. Put aside 1/4 cup.
2. Now add chicken to the bowl and tossed together. Put it aside to marinate for 20 minutes .
3.Now preheat grill to medium heat. Add chicken to grill with reserved marinade until cooked.
4. Serve it hot with garnishing parsley over it.
